  21. * 150gm margarine or butter
  22. * 125 gm brown sugar
  23. * 2 eggs
  24. * 125 gm plain flour
  25. * 125 gm self raisingflour
  26. * 2 heaped teaspoons ground ginger
  27. * 1 teaspoon mixed spice
  28. * 3/4 cup golden syrup OR treacle
  29. * 1 cup milk
  30. * 1/2 teaspoon carb soda
  31. * 2 tablespoons boiling water
  32. * 125 gm ( at least ) chopped ginger ( can be crystalised or glaced )

  34. Cream the butter and sugar. Add eggs, one at a time, then flours sifted
  35. with the ground ginger and mixed spice. Mix the melted golden syrup ( or
  36. treacle ) with the milk and add it to the mixture. This will be very
  37. sloppy, but that's the way it should be. Next add the boiling water to the
  38. carb soda in a cup, mix it into the cake mixture. Then fold in the ginger.
  39. Grease and line a cake tin with Bake paper on the bottom, and place in a
  40. pre-heated 180 C oven for 30 minutes, then reduce heat to 145 C and bake a
  41. further 45 minutes. The cake is ready when an inserted skewer comes out
  42. dry. When cake is cold, ice with lemon icing and sprinkle chopped ginger
  43. on top. Then enjoy.
  44. No idea what she means by "melted golden syrup".
